Being raised on a ranch in East Texas, BBQ was a staple for Amy and her family. While she may have been too young to man the grill, she had plenty of opportunity to enjoy the foods of their family's labor. From their home raised beef brisket to pork ribs and even chicken, there was no shortage of farm fresh food being moved from the freezer, to the grill, onto their plates, and into their bellies! 

After the passing of Amy's father in 2016, she wanted to carry on the annual tradition of preparing the brisket for the 4th of July festivities. She bought herself a traeger and set out on the task of perfecting her meat for the day. It was a huge success and she fell in love with the art of smoking food instantly. She began to try various recipes and hosted several parties to try out her new creations. After a short time, friends began asking Amy if she would prepare food for their different events as well. She had no idea what the future would hold for her and her newfound hobby. 

In 2018 Amy and Joel began dating and he was introduced to her love for hand crafting Meats and Sides on her smoker. Joel quickly jumped on board and was soon trying his hand at different techniques himself. After a short while into their new adventure together they realized that a traeger just simply wasn't big enough for some of the requests they were getting. Together they decided to challenge themselves and perfect the art of using a real stick smoker and offer a taste that is more flavorful and more true to Amy's roots. As their love for each other grew, so did their love for the art. They purchased an East Texas Smoker Trailer and decided to turn their hobby into a part time profession and took on catering private parties and events throughout the Cowlitz and Lewis County Areas. 

In 2020, Amy and Joel decided to take the catering route more seriously and Amy decided to leave her full time career as an insurance agent and focus on their desire to share their food with others. Within a week of putting in her 2 week notice, everything came to a halt as Covid shut downs occurred. Having left her role as an insurance agent, she now feared she would be without an income as more and more couples were calling to cancel their catering contracts. Amy decided the best thing to do was roll with the times and offer food to go as restaurants around them were closing their doors to indoor dining. What started as a little take out window with 0 staff has slowly become one of Lewis County's hot spots for not only handcrafted smoked foods, but also delicious cocktails, and great night life entertainment. Amy and Joel truly feel blessed to be walking this journey together and have enjoyed seeing the fruits of their labor blossom.

The great thing about BBQ is that there are so many different varieties! While there are so many varieties to choose from, Amy and Joel noticed the one thing the Pacific Northwest was lacking was true Southern Style BBQ featuring low and slow smoked Meats using a stick pit.

Amy and Joel's Texas Style BBQ menu is surely one to please those taste buds. The goal was to stick to Amy's roots and offer a taste of the south that she grew up loving and bring it to you.
